Origin
From the south of Japan, where spring arrives first.
Kagoshima sits at the southern tip of Kyushu. Its warm climate lets the tea plants flush earlier than anywhere else in Japan. Our matcha comes exclusively from that first harvest – the most tender leaves of the year.
First spring harvest
Only the young leaves of the first picking. Softer, sweeter and far less bitter than later harvests.
Shade-grown
The plants are covered before harvest. That gives the matcha its deep green and its sweetness.
Stone-milled
Milled slowly and cool so the aromas stay intact and the powder turns velvety fine.

Ingredient: green tea powder. Nothing else.

How to brew
Three steps. Ninety seconds.

2–4 g
Sift
Sift 2–4 g of matcha into the bowl through a fine sieve, depending on how strong you like it. No lumps, finer foam.

1 : 13 · 63–70 °C
Water
Ratio 1 : 13 – 13 ml of water per gram of matcha, so about 26 ml for 2 g. Temperature 63–70 °C: cooler tastes sweeter, warmer more robust. Adjust the water to taste.

≈ 20 s
Whisk
Whisk with a chasen in quick W-strokes until a fine, even foam forms.
For a latte: cold, pour the whisked matcha over cold milk and ice. Warm, put the matcha in the cup first, then add the warm milk.
